Soup season is officially open, and one good pot can carry you through several dinners. This week there's a bowl for every mood: light and spicy, rich and creamy, or thick enough to call dinner. 🍲
A quick stock from the shrimp shells, then ginger, lemon zest, bird's eye chiles and Thai chili paste: hot, sour and bright, ready in 45 minutes and big enough for a crowd.

💡 Tip: make your soup a day ahead if you can. Overnight in the fridge, the flavors settle and deepen, and any fat rises to the top so you can lift it right off. Cook pasta or rice separately and add it to each bowl as you serve, so it doesn't soak up all the broth and turn mushy.
